INGREDIENTS

Serves 1
Prep time 5 minutes
Cooking time 5 minutes

1 plain wholegrain english muffin, split (see tip)
1 tablespoon salt-reduced tomato puree
4 button mushrooms, thinly sliced
1/4 cup (30g) grated light cheddar
METHOD

1. Lightly toast outside crust of muffin. Spread purée on untoasted side. Scatter with mushrooms and sprinkle with grated cheese. Cook under a preheated grill, until cheese has melted and is lightly browned.
